Wine maker notes
The grapes for our Cabernet Sauvignon were gently destemmed, resulting in some whole berries. The must was fermented in a combination of cone sweep, rotary and upright fermenters for five to seven days at a maximum temperature of 85°F to retain fruitiness and soften the tannins.
